“It’s So Good, Makes You Wanna Slap Yo Momma!” Remembering My Dad, Pete

Remembering my dad, Pete. For Sunday dinner, I made his famous chicken and rice—only this time, I added my own twist. I made it vegan, with gluten-free sweet potato gnocchi and vegan sausage. It’s how I keep his legacy alive—remembering that he lives on through me. It’s how I remember him with more love than pain.

As I scooped a spoonful into my bowl, I smiled, recalling the aroma that filled the house when he cooked it, the vibrant vegetables overflowing, and, of course, I remembered him sitting at the table, excited, looking forward to his own meal.

In his words,

‘It’s so good it makes you wanna slap your mama!’

As I eat this right now, I feel my grief, because I miss him terribly, but I smile too, knowing he’d be so proud that I’m doing this in his honor. Right now, I miss him so much, and I’m giving myself permission to feel that.
